Collards! In the cabbage family, these loose-leaf greens are high in Vitamin C and fiber and are believed to have Cancer fighting agents. Collards are very similar to kale and can be used in many of the same ways. I like to saute them in just a little bit of butter (or bacon fat) w/ garlic, red pepper flakes, salt and pepper. You can also throw it in soups, smooties, or stir-fry. Here are a few more ideas: Sauteed Collards & Kale,Breakfast Tacos w/ Eggs, Onions & Collards, and Creamed Collard Greens.

Make a market meal: Saute onion, garlic, carrots, green beans, zuchini, squash in olive oil until cooked through. Add kale/collards, splash of soy sauce, red pepper flakes and sesame seeds (Spicehound). Serve over cooked whole grain rice.

Vendor Spotlght: Community Greenhouse Partners

Community Greenhouse Partners (CGP) began in 2008 after Executive Director and Founder Timothy D. Smith saw the film Fresh, a documentary about sustainable food systems that featured the Milwaukee-based program "Growing Power." After turning to his wife and asking "Why aren't we doing this here?" he gathered a team of experts and rallied volunteers from throughout the Greater Cleveland area to bring the vision to life. With the input of many, the vision has grown and morphed into what E4S founder Holly Harlan would call a true BHAG -- a big, hairy audacious goal -- but one that is well and truly on its way to becoming a complete reality.

CGP is a sustainable urban farm that applies ecological design principles and engages community participation to grow wholesome food year-round, improving personal health while generating training, mentoring, and employment opportunities for our neighbors.

CGP’s mission is to improve the quality of life for those around us by growing vegetables year round and selling them at low cost to urban families, employing local residents, and teaching sustainability and earth science to young people.

CGP is growing food year-round in four hoop houses, which produce salad greens and microgreens along with other seasonal vegetables. CGP also has multiple large raised beds that produce vegetables during traditional farming seasons and a Forest Garden that will produce a wide array of fruits and nuts within the next five years. They will build a large-scale greenhouse complex to raise significant amounts of vegetables and fish using a closed-environment Aquaponics system and have recently begun a large-scale vermicomposting operation which feeds organic waste from area restaurants and grocery stores to red wriggler worms in order to create our own soil.

Central to the mission of CGP are Aquaponics, Composting and Forest Garden projects — all areas where they practice Permaculture, an approach to designing systems that are modeled on the relationships found in nature rather than on the strictly biological concerns that form the foundation of modern agriculture. Permaculture is founded on three ethics — “care for the earth,” “care for people,” and “fair share.”

CGP is committed to not only selling fresh fruits and vegetables to their local neighborhood but also teaching nutrition and the proper ways to prepare food for the table. The farm is located in the St. Clair Superior Neighborhood, an area recognized as a “food desert” due to the lack of stores selling fresh food within a reasonable distance. CGP will build a community kitchen that will teach cooking skills to increase food literacy in urban households and will work with the Diabetes Partnership of Cleveland to heighten awareness and teach neighbors how to combat and control Type II Diabetes.

Using the commercial kitchen and the classrooms in the former church, CGP will also operate as an aggregator of crops for area urban farms, helping gardeners expand their marketability, offering training on season extension, and create opportunities for sales in larger markets. They will offer local gardeners and farmers the opportunity to create value-added products from their crops and will also help area farmers access economic development grants from the City of Cleveland.

CGP’s Permaculture Education Center is teaching middle and high school students about sustainability and permaculture by using the Montessori technique of learning by doing, working with students on composting and soil biology projects, greenhouse and hoop house design, integrated pest and plant management and the construction of water capture systems. College interns looking for long-term urban farming experiences are also welcome.

    Lakewood Farmers Market Opens This Saturday June 30


     
    Saturday, June 30th the Lakewood Farmers Market (LFM) will open for it’s 2012 season, providing Lakewood residents a weekend downtown destination to eat, shop, enjoy free entertainment, summertime and meet their neighbors.     In addition to providing Lakewood’s downtown a weekend community event, Lakewood Farmers Market’s mission is to create an incubation space and outlet for local entrepreneurs, from backyard growers to budding and established small food businesses. A number of vendors from previous seasons are Lakewood residents, and LFM is adding more Lakewood-owned small businesses to its vendor list each year. In conjunction with this mission, LFM is continuing its vendor assistance program during 2012 through an Ohio Department Agriculture grant withGrowhio, an organization aimed at educating consumers and increasing the demand for local food. Under the program, furnished vendor "incubator" booth space and technical assistance is available for farmers who have not vended at a farmers market before and will sell produce, herbs, honey or maple syrup.
    The Lakewood Farmers Market and LEAF, which takes place Thursday nights from 5:30 p.m. -  8:00 p.m. in front of the Lakewood Public Library, accept EBT and will provide a dollar-for-dollar match (up to $10) in “Produce Perks” tokens that can be used to purchase fresh produce from local farmers. The program is a partnership with Wholesome Wave and Cuyahoga County Food Policy Coalition.

    Happenings at Gordon Square Farmers' Market This Saturday

    Hello fellow eaters:

    I know that some of you may have been startled by a policy-oriented eater update in the second week of the market, but when one is thinking about whence our food comes, gentle eater, you never know what connections you are going to find. So this week I will return to one of my favorite annual eater update announcements: there will be beets at the market this week. Now there were beets at the market last week, but they were a surprise, so I could not announce them in advance, and (very) early beets always deserve a fanfare. Normally I have a bunch of little beets plugging away underground in my own garden and jars of beets in the cupboard, but somehow we were short on beet seeds at the garden this year and there are few pickled beets left, so I am sliding toward a beet emergency and am, thus, greatly relieved to find that we will have both golden and red beets at the garden this Saturday. If you have already heard enough about beets from the eater update or other sources evangelizing for beets (you never know…), you can skip to the part where it is revealed what our farmers will bring to market, and then bring your neighbors and friends to the market with you and not talk about beets. There are some folks who really think that beets "taste like dirt" (thanks, mom), but i think that there are also folks who have just heard that beets are yucky from a parent or sibling and therefore suffer from beet prejudice without having ever tried well-prepared beets for themselves. Some folks think that golden beets taste less like dirt than red beets, so if you would like to overcome your beet prejudice, you might try goldens--although i personally think that is simply replacing one prejudice with another. Beets respond well to roasting (peeled, with olive oil and kosher salt), which makes them nice and sweet and nutty; serve with a teeny bit of strong mustard for courage. Steaming or boiling beets (you can leave the skins on and wait until they cool to peel them, and the skins will fall right off) allows them to absorb other flavors very nicely, which makes them wonderful ingredients in salads. Now, the eater update classic beet salad is the beet-feta cheese-red onion-mustard vinaigrette, which has been dubbed by a certain reader as the "best beet salad," both for its ease and deliciousness. The PD ran a recipe for a beet salad with an orange juice based dressing which was quite tasty. Lately I have a thing about putting beets and ginger together, maybe with apples (I know, apples are not in season yet, but beets with be in season for a long time, now, so I can plan ahead). As the hot peppers come in i have designs on some sort of beet-chile pepper combo; film at eleven about that. I could go one quite a bit longer about the many virtues of beets and ideas for overcoming beet prejudice, but my bedtime is fast approaching, so enough about beets and on to the market.

    EcoVillage Produce will bring collards, southern hot mustard greens, beet greens, tuscan kale, banana peppers, snow peas, cucumbers, spring onions, garlic scapes. Herb: basil, lovage, mint, sage. 

    Maggie's Farm will have golden beets, carrots, swiss chard, russian kale, onions, and perhaps some chives, scallions and tuscan kale.

    Dharma Garden will have lots of red beets with tops, yellow and green zucchini, some tomatoes, cucumbers and green peppers, thyme, basil, mint, sage, flowers, and baked goods.

    Wooden Knight Farm will have garlic, red beets, beet greens, and salad mix.

    Berry Good Farm was a the market last week with eggs (!!), a variety of baked goods, honey, grains, and really wonderful soap. I hope they will be back.

    Mobite Bakery will have all vegan baked goods: carrot cake, apple pie, bean pie, zucchini muffins, chocolate cupcakes, carrot supreme, vegan alternative to tuna fish salad.

    Origins Beanery will probably satisfy our caffeine fix in the most tasty and sophisticated ways, probably including the tastiest iced coffee you are ever likely to have.

    Last week we had a bread stand, which was a wonderful new development--and timely for those of us who stop baking bread when it gets hot outside. 

    ReMemories will not be at the market this week, but perhaps Dave Katchadorian will have his lovely pottery there anyway. 

    Also there will be yoga at the market this and every week; shop and then practice or practice and then shop; feed body and soul, no?! Class is from 11-12 and is open to all levels of practice. the class is donation-based and will meet in the labyrinth across the street from the market.

    The farmers' market will provide a dollar-for-dollar match (up to $10) in PRODUCE PERKS tokens that can be used to purchase fresh produce from local farmers. "Produce Perks" will be redeemable at all participating markets and will be available while supplies last.
    How does this incentive differ from last year? Last year Ohio Direction Card customers were able to receive an extra $5 for every transaction they made for $5 or more at participating farmers' markets to use on all Ohio Direction Card eligible food items. The 2012 incentive is limited for use on fruits and vegetables only and starts with the first dollar you spend. There is no minimal transaction amount necessary to receive incentive tokens, therefore you can spend $1 and earn another $1.

    One of the best things about shopping at a farmers market is learning about new foods. Last year, I discovered fava beans for the first time! Here are a few ideas for some of the items you will find at today's market that might seem unfamiliar to you...

    Beets: Thinly slice beets and saute in oil/butter on medium heat until nearly cooked through. Roughly chop beet tops and rosemary and saute a few minutes longer with salt and pepper. (Beets are high in folate, manganese and potassium)

    Swiss Chard: You can use Swiss Chard for most anything you would use spinach for. I like to saute it with a little garlic and crushed red pepper. It's also good thrown in soupsand pasta dishes. (Also in the beet family, Swiss chard is considered to be one of the healthiest veggies and is high in vitamins A, K, C, fiber and protein)

    Whole Chicken: Don't be intimidated - there's something to be said about a chicken that's locally raised and allowed to graze. Preparing a whole chicken is a great value when feeding an entire family but can also become multiple meals for a single young professional. You can roast the bird, throw it in a crock pot, or make beer can chicken on the grill.
