Featured Recipe: 
Fava Bean Moroccan Bessara Dip
  • 1 lb fresh fava beans
  • 2 cloves garlic
  • 1/3 cup olive oil
  • 1/4 cup lemon juice
  • 1 1/2 teaspoons sea salt
  • 1 teaspoon ground cumin
  • 1/2 teaspoon sweet paprika
  • 1/2 teaspoon hot paprika or cayenne pepper
  • Additional cumin, paprika and olive oil, for garnish
  • Chopped parsley or cilantro, for garnish (optional)
Preparation:
Peel the fava beans and remove the waxy covering (optionally you can also lightly toast the beans in a skillet).
Combine the ingredients - except garnish in a blender or food processor and blend until smooth adding additional olive oil as needed.
Garnish & serve with herb toast or Judy's pita chips!
