One of the best things about shopping at a farmers market is learning about new foods. Last year, I discovered fava beans for the first time! Here are a few ideas for some of the items you will find at today's market that might seem unfamiliar to you...

Beets: Thinly slice beets and saute in oil/butter on medium heat until nearly cooked through. Roughly chop beet tops and rosemary and saute a few minutes longer with salt and pepper. (Beets are high in folate, manganese and potassium)

Swiss Chard: You can use Swiss Chard for most anything you would use spinach for. I like to saute it with a little garlic and crushed red pepper. It's also good thrown in soupsand pasta dishes. (Also in the beet family, Swiss chard is considered to be one of the healthiest veggies and is high in vitamins A, K, C, fiber and protein)

Whole Chicken: Don't be intimidated - there's something to be said about a chicken that's locally raised and allowed to graze. Preparing a whole chicken is a great value when feeding an entire family but can also become multiple meals for a single young professional. You can roast the bird, throw it in a crock pot, or make beer can chicken on the grill.
